Global Cuisine with a Difference @ Leela Ambience, Gurgaon

Leela Ambience has always been a top notch when it comes to food, the chefs at Leela keep experimenting to deliver the best experiences to their customers and just recently they have started EPIC, Global Cuisine. Curated by the executive sous chef Abhishek Gupta, EPIC boasts of global cuisine but with a difference.

I have been lucky enough to try this specially curated menu and trust me its not just a meal, its like a poetry in food, or may be a food story that keeps flowing  to you, each item on the menu has its own story to tell, from ingredients to its preparation, this is a tale you don’t want to end. In fact the chef has even written the entire menu in a story form, which in itself was very appealing to me.

This is a proper sit down meal, where in each course is served in a unique manner, with excellent presentations and the chef himself comes to the table each time to explain the dish. The theme was monochrome and hence each dish represented different shades of one colour and I can’t tell you how good the food looked. It was so tempting to look at that at first you can’t take your eyes off it, and all you wanna do is stare, but at the same time, temptation makes it difficult to resist.

I am not going to spill too much on this one, because its an experience you need to indulge in yourself, but certainly I am telling you the names of the dishes and leaving you swoon over the pictures so that you drool over them and plan your visit to Leela soon.

Finger Millet Tart

Millet Tart filled with Edamame and Peas with some sour bread sauce, it was a delightful beginning with this dish. Look at the green colour, so refreshing to the eyes and the taste buds.

Deceptive Tuna

Compressed watermelon, beetroot textures, pork, caramelised grapes, inspired by textures of tuna, this was a delectable preparation in monochromatic red.

Tawa Chicken Brûlée

This was one of the highlight preparations for me, a tawa chicken served like mousse, and caramelised served with a galauti parantha.

Peruvian Style Bean Ensalada

One of the best things I had that evening, a crunchy and juicy salad made with three different beans, you have to try this one.

Fermented Bread

A fermented millet bread served with smoked butter and coriander and thyme paste.

Grilled Lamb-Diana Red Rice

Cumin rubbed grilled lamb served with special Karnataka red rice simmered with fennel seeds, shallots and mushrooms which gave it a very creamy texture just like a risotto and the lamb too was perfect.

Then we tried three different desserts and each one of them was a work of art, both in presentation and taste.

First things first, let’s tackle the media and social media. Every day we are exposed to seemingly endless images of models and celebrities looking the image of perfection. Many celebrities will admit themselves that the photographs of them plastered over posters and advertisements don’t actually look anything like them in real life. The unfortunate thing about stomach pain is that it can often be difficult to work out exactly what is going on in there and whether it’s just an average stomach upset or something more serious. This can lead to many people ignoring their tummy troubles when they really shouldn’t

If you’ve been experiencing stomach pains recently, check out these stomach complaints and they’re symptoms, to ensure you get the help you need:

Acid Reflux

Acid reflux occurs when the stomach acid finds its way back up your digestive system to your throat. Symptoms of this very common stomach complaint include a burning just below the breastbone, which tends to rear its head after eating and is often worse when you’re in a reclined position.

Take Action: To solve the acid reflux situation, simply take some antacids, such as tums when the pain hits. Even better, try to determine the foods that cause your issues and avoid them. Take Action: Should you experience these symptoms, you should get yourself to the emergency room right away. An inflamed appendix needs to be removed quickly, or you could risk it rupturing or introducing lots of life-threatening bacteria into your body.

Gallstones

Gallstones are one of the most painful tummy conditions of all, and all of the trouble is caused by small stones of hardened bile and cholesterol that form in the gallbladder and which are usually caused by a diet that is very high in fat. Symptoms of gallstones include a sharp, searing pain in the upper mid-abdomen area, which spreads to the right side. You may also suffer from diarrhea and sickness if you have gallstones.In serious cases, fever may also be present.
Take Action: When gallbladder pain hits, take an over the counter pain medication to relieve the symptoms. If it doesn’t work, or if the pain goes on for more than two hours, and definitely if you’re vomiting with a fever, you will should get yourself to a doctor. Chances are you will need to have your gallbladder removed.

Crohn’s Disease
Crohn’s disease is an inflammatory bowel disease that usually affects the colon and small intestine. Symptoms of crohn’s include persistent pain in the abdominal area, weight loss, and diarrhea.

Take Action: There is currently no treatment for this particular disease, but if you think you may have it, it is essential that you see a doctor who can prescribe things like steroids and anti-inflammatories to help manage the condition.

4 Things Your Morning Routine Needs More Of

Every day starts with a morning. There is no escaping that fact. That’s what makes or break moment that sets you up for a great day or one you’d rather forget in a flash. Save The Coffee For Later

What you drink first thing in the morning is so important when it comes to getting the rest of your day right. Traditions and rituals of wedding ceremony in India !

Indian wedding traditions and rituals take its roots from Vedas to the glorious times of the Aryan culture reign. Wedding for Indians means not only the union of two people, it is also two souls. Indian marriage proves that people are devoted to faith and ancient traditions, strictly keeping and honoring them for thousands of years.

The marriage ties the bride and groom families as it said in the vow ‘from that moment of happiness and misfortune, sorrows and joys, respect and honor’. They strive to make this event as great as possible. If you see the photos of any wedding photographer in Delhi or the other state of India, you will see the riot of colors. Do you know about Indian famous Holi – Hindu spring festival well-known as the “festival of colors” or the “festival of love”? A wedding can be considered like a small version of this festival.

Wedding periods

Wedding ceremony consists of three periods: pre-wedding ceremonies, wedding celebrations, and rituals after a wedding. All of them are obvious for execution and should be performed properly. Each family takes them close to heart and soul. 

Pre-wedding

During the first period a horoscope of the bride and groom is composed in order to find out whether they fit each other. Before this done the date of a wedding will not be set. Indians are very superstitious and very serious in this question because the divorce rate is very low and divorce itself is considered shameful. So as astrological compatibility is satisfactory, the groom’s parents agree on the marriage.

On the wedding eve two meetings (first in the bride’s and second in the groom’s house) are arranged. This is made to greet each other with a future holiday and bring presents for each other. The bride does not leave her house 2 days before a wedding.

The Mehndi ceremony is an integral part of the pre-wedding period. This is a kind of body art made of henna. It is believed that being at the groom’s house the bride should not work until the Mehndi disappear.

Wedding day

The wedding is played in the evening traditionally at the bride’s house. Today it is considered a bit old-fashion and there are a plenty of venue halls for a celebration of marriage. By the way, wedding is played at the bride parents’ expenses.

Dresses are chosen and bought by young people. Typical bride’s dress is sari. It is usually of red color. Hair is laid up smoothed with fragrant oils and decorated with flowers, and jewelry.

The bridegroom must arrive on horseback, he is met by the bride’s father and uncle (again it is as for traditional variant, as far for today he can arrive on a car). Then he follows bride’s father and exchange garlands of flowers with his future wife.

The table serves with strictly dairy-vegetarian dishes (meat, fish, and eggs are prohibited). It is also forbidden to eat until the beginning of the wedding ceremony.

After dinner, future marrieds go to a small temple. There they should make seven circles walk around the burning fire at the center of the temple. Now they are already husband and wife.

After wedding

When the wedding is over, the bride says goodbye to her relatives and goes to her husband’s house. Arriving at husband’s house, the bride meets her mother-in-law and step into the tray with red paint for good luck.

Weddings are usually numerous as families in India are large. For a wedding, 300 guests are normal, though it can reach up to 800 guests.

 

 

 

Witnessing Royalty of Rajasthan at Fairmont, Jaipur!

Opulence, Royalty, Class, Expansiveness, Luxury are some of the words that came to my mind the moment my car stopped at the porch of Fairmont Hotel, Jaipur. And as I kept moving from the porch to the entrance and finally to my room, all these words turned into reality. Right at the welcome, when a man clad in traditional Rajasthani clothes sings “Padharo Mare Des”, you start feeling the royalty of Rajasthan seeping in, at least thats what I felt. To me whenever this song is sung with a deep tone, it gives me goosebumps.

As I moved towards the lobby, smiling faces awaited me to process a smooth check-in. While it just took about 5 minutes for the entire process, even in those 5 minutes, glimpses of luxury started to show. Cold Towels, Welcome Drink and Escorted entry to my room, I had already started to enjoy my short vacation.

Now coming to the best part, the room, it oozed out opulence and class and trust me when you open the doors to the expansive bathroom, your heart almost skips a beat. Calling it lavish, would be an understatement. The bathtub in the centre catches your attention instantly and all you want to do is, fill it up with a hot bubble bath and just soak yourself and let the luxury take its course on you. But as I reached late in the afternoon, the hunger didn’t let me indulge in the bath at that moment, and it had to wait for a later time in the night.

Now to satiate my hunger, I headed down to Zoya, the all day dining multi cuisine restaurant. A chicken caesar salad, a platter of non-veg kebabs and lamb biryani comprised of my hearty meal. The salad was good and gave me a refreshing start to the meal. From the kebab platter, I loved the Kasundi Mahi Tikka the most and also the Chicken Tikka and Chicken Malai Tikka were done well, but the best was the fish.

The Lamb Biryani is surely something you shouldn’t miss, it was one of the highlights. The rice were perfectly spiced and the fried onions garnish added another layer of flavour to it. The mutton pieces were really soft and tender. Served with raita, its a complete meal and believe me you won’t need anything else. 5 senses and toffee date pudding are the desserts you can’t afford to miss again. They will melt in your mouth.

After this appetising meal, I retired to my room for a small nap, whereas my son tried his hand at Table Tennis in the hotel itself. The hotel does offer quite a lot of activities for children of all age groups. Later I spent most time of my evening dipping myself in the expansive pool, almost for 2 hours and it made me feel refreshed and tired at the same time, but I thoroughly enjoyed myself.

A quick shower and was ready for yet another culinary exploration and this time headed to  Zarin, a speciality restaurant that serves Persian delicacies. Shishlik, boneless lamb chops on skewers was a melt in the mouth experience and is definitely a must try. Jujeh Kebab was the next dish on my platter, succulent pieces of barbecued chicken, this too was delicious. We also ordered for roasted lamb chops and they too were a delight, full of flavours, but only I wished that the meat was a little more tender.

For main course, we tried Dal Zarin, Nihari Khas and a Chicken based gravy dish, and all the main course dishes were fabulous and should surely be given a try. But the best was yet to come, it was the dessert platter, with Baklawa and Baglawa and I just could not have enough of both of these items. They were simply the best I have ever eaten.

After a very hearty meal yet again, I headed to the comfort of my room for a good night’s sleep. I really had a very peaceful sleep as the rooms are completely sound proof, I got up just in time for the breakfast. The breakfast was a lavish spread at Zoya and one can get a lot of options from English breakfast to American and Indian with regional delicacies as well.

I spent the day at leisure, indulging in games, hitting the gym and dipping in pool. The lunch was special on this day, as we got to savour the typical Rajasthani Thali and no amount of words can justify the flavours, the presentation and the taste. You really need to have it yourself to believe the goodness of it. I have to admit that I had once earlier also tasted the Rajasthani Thali but didn’t like it much back then, but here at Fairmont, it was easily one of the best things I had. The veg thali especially included things which I had never tasted before and I loved all of them. Papad Mangodi ki Subzi, Gatte ki Subzi, Sagri Ke Kofte and Dal Batti Churma, everything was outstandingly delicious. In the non-veg thali, Laal Maas was obviously the highlight. Finishing the meal with Kulfi Falooda was just the thing to do.

For dinner, we have a private set up done at the terrace overlooking the pool and a magnificent tomb. We settled for some Asian food that night and I think this is one area where the hotel needs to work a bit. In comparison to the Indian and Persian food, Asian food did not meet much of expectations. Main Course consisting of Sichuan Chicken and Chicken Garlic Noodles was really good whereas starters except Chicken Spring Rolls were disappointing.

After a luxurious bath at night I once again had a comfortable sleep at the Hotel. The third morning, after a continental brunch at Zoya, I had to bid goodbye to this luxury and head back home. I enjoyed a grilled chicken breast with mushroom sauce for my brunch and it truly was delicious.

Goodbyes are often the most difficult thing and who wants to leave such comfort, class and luxury, but like they say ‘all good things come to an end’ and so did my short 2 night-3 day trip to Fairmont Jaipur. But I am sure I will be going there back very soon as I fell in love with the place. If you haven’t stayed at this hotel, it should definitely be in your list. I am still swooning over the place.
