Another week. Another café. ☕😄
At this point, it sometimes feels like Goa is opening cafés faster than people are finishing their coffees.
So Nolan Mascarenhas and I got talking: why does everyone want to open a café? Why a café over a restaurant? And when there are so many of them, why are they all beginning to look strangely familiar?

In this episode of WHAT’S NEXT?, we're not trying to explain the café business or predict which format will win. We're simply looking at what's happening around us and asking some questions.

Is the café format genuinely more attractive today? Has Instagram created a certain café aesthetic everyone wants to replicate? Are we going to cafés for the coffee anymore? And when great coffee, pretty interiors, sourdough and good lighting become standard, what actually makes one café memorable?

There are opinions, disagreements, café red flags, rapid fire and probably a few things café owners won't agree with us on. 😄

What do you expect to find when you walk into a Goan restaurant?
Fish curry rice? Recheado? Xacuti? Cafreal?
Or… fried rice, butter chicken and paneer tikka? 😅
In this episode of Tête-à-Tea, Odette Mascarenhas and I have a rather fun conversation about the dishes we would rather NOT see taking over the menu of a restaurant that calls itself Goan.
But this isn't about saying Goan food should never evolve. In fact, that's where the conversation gets interesting.
Where does adaptation end and identity begin?
Can a Goan restaurant serve global favourites and still remain Goan? And more importantly, are we slowly giving more menu space to familiar crowd-pleasers while traditional Goan dishes quietly disappear?

Mediterranean flavours, gorgeous sea views and a menu worth exploring! ✨
I experienced the special Chef Alaa Alloush Culinary Takeover at C2C, Taj Cidade de Goa Horizon, where Mediterranean traditions meet the soul of Goa’s coastal cuisine.
The Kunafa Prawns were an absolute highlight and the Kibbeh is another must-try. But I’d actually recommend exploring as much of the menu as possible because Chef Alaa brings his own interpretation to the classics.
From appetisers and mains to desserts, it really is a journey through flavours.
