A Rejuvenating SpaCation at Coco Shambhala, Goa

A daycation spent amidst nature, tropical 🌴 green setting, a lush pool, a therapeutic spa, jacuzzi, and a scrumptious 3-course meal, what more can you ask for. A perfect monsoon indulgence @cocoshambhala  got me covered to enjoy a luxurious staycation where I enjoyed all of this and lots more.

The spa package packed with a daycation was the kind of mid-week getaway I am a sucker for. The day to day life is so hectic with work, that even a hint of such an opportunity is something I grab with both hands wide open. So for a girls day out, Coco Shambhala, the luxury resort nestled in Nerul was a perfect option.

I was thrilled at the inclusions that this spa package offers. A relaxing massage, access to the villa which has a jacuzzi as well, use of the expansive swimming pool and a delicious and healthy 3 course meal along with a bottle of wine, like I said above, literally what more can you ask for. And at Rs 12500 for two people, its definitely an offer hard to resist.

The spacious and tastefully decorated rooms of the villa take care of all your comfort needs, the outdoor shower 🚿 is such a delightful experience and the patio serves as an excellent area for some relaxed time.

After lazing around in my room and exploring the natural beauty that surrounds Coco Shambhala, it was time to indulge in super delicious food.
The dining table was laid out perfectly and the decor was in resonance with the tropical 🌴 surroundings. The use of jute and lots of green plants on the table made the lunch even more inviting and alluring.

The Welcome Cocktail, A Curry Leaf #margarita made with Tequila, lime juice, Cointreau not only matched the ambiance but also tasted extremely refreshing 🍸

Spiced Beetroot Cakes stuffed with roasted peanuts & cheddar and served with coriander sauce made for a perfect starter. I loved the texture of the cakes and with subtle spices, one could taste the beetroot and peanuts without anything overpowering the flavor.

Raw Papaya & Carrot Salad tossed with roasted fennel, dill & sun-dried red chili was nutritious, juicy, healthy and super delicious 😋 

Beef Moussaka Timbale along with Greek salad, herb butter-toasted poi was the best I had in recent times. 

Chilli Chocolate Ganache with plum sauce, basil crumble & pomegranate was a dessert to die for. 

For me, the spa day at @cocoshambhala meant a complete relaxation of mind, body, and soul. For my always stressed body, I went ahead with the INVIGORATING Body Massage, it’s especially meant for those who are feeling the streaks

An oil blend containing pure essential oils of Frankincense, Orange & Grapefruit is massaged into the body to revitalize and stimulate both the body and mind thereby balancing the flow of energy. All three essential oils used in this massage are known for their energizing, uplifting and stimulating qualities. The massage helps increase energy levels and improve mental clarity and comprehension.

The aroma of candles, the mediating soft music, and this lovely massage literally made my day and then, of course, it was time to let my hair down and have some fun in the pool and private jacuzzi.

It took long enough to catch the right one, now you’re knee deep in wedding planning and looking to find that perfect venue. The choices seem endless and you’re aware that time is ticking away so you want to book that perfect place as soon as possible.

The All-in-One

These packages often offer excellent value for money, especially if you are not holding the marriage service at a church. You will usually be given a wedding liaison representative from the venue and be able to talk through exactly what each package offers you.

There will be slight variations but most will include some alcohol, a meal (or two) and some form of entertainment in the evening. If you are marrying at the venue they will provide outside and inside options to cover all weather eventualities.

The more expensive options will include the little extras such as more alcohol per table, decorative table centrepieces and a master of ceremonies. Of course it’s entirely possible to provide all these little extras yourself.

The DIY

With this version sourcing most of the furniture, the venue and the marquee will be down to you to locate. This isn’t as tricky as it sounds and once you have the field and the marquee booked in, you should then be able to find a catering company to provide you with a food, bar and all the furniture that’s needed.

The cost will be cheaper but much of the hard work will be done by you. For many couples getting everything done exactly the way they like it has its appeal.

The Destination

If you’re really looking to push the boat out then no look no further than the destination wedding. Fulfil your dream of tying the knot while barefoot on warm white sounds with a lazy blue ocean forming the backdrop of your nuptials.

There are some obvious drawbacks to this of course. The greatest one being the cost but you may also run up against some opposition from family and friends who can either not afford to join you or who would be unable or unwilling to take the time off work.

To get this done properly requires plenty of advance notice and you must ensure that you choose a wedding company that has a long history of planning weddings abroad.

With luck, you’ll only get married once so choosing the right venue is a crucial part of the process. Whether you choose a venue that will take care of the majority of the planning for you or decide to go it alone, your wedding is as unique as the two of you and should be your special day in your special place.

Celebrate World Tapas Day in the Spanish way!

For food enthusiasts out there, who like to experiment and enjoy different types of cuisines, World Tapas Day is just around the corner. A quick background on tapas; tapas are small bites of food – snacks or finger food which is accompanied by beer. In Spain, drinks are enjoyed in small glasses called “cañas” and this Cañas y Tapas culture is now becoming a favourite of Indians as well. 

Tapas as a concept is similar to the snacking habit of Indians. It can range from authentic Spanish – paella, croquettes, patatas bravas to Indian small bites such as pakoras, paneer tikkas, and other tandoori snacks.

To honor and recognize this diversity of Spanish gastronomy – World Tapas Day is celebrated every year on the third Thursday of June across the globe. This year, it is being celebrated on 20th June, 2019. 

Celebrate World Tapas Day by making your favorite tapas at home – there are so many different styles and choices. We suggest picking a few, inviting over some friends, and enjoying some tapas with chilled Mahou beer! 

I am starting with the amazing recipe of Butter Garlic Prawns Served With Beer Battered Onion Rings, a recipe that helped me win the Mahou Maestra Chef Season 2.

  1. Butter Garlic Prawns With Beer Battered Onion Rings

An extremely simple and delicious recipe, doesn’t take too long and is an all time favourite.

Ingredients:

  • 1/2 kg cleaned prawns, medium sized 
  • 2 tablespoons butter 
  • 6 garlic cloves, peeled and chopped
  • 1 teaspoon mixed herbs
  • 1 tablespoon olive oil
  • Small tartlets for serving
  • Mint leaves for garnishing
  • 2 big onions cut into rings
  • 2 tablespoons flour
  • 1 tablespoon corn flour
  • 3/4th pint of Mahou Wheat Beer
  • 1/2 teaspoon mixed herbs
  • Salt to taste
  • Bread Crumbs
  • Oil for frying
  • 2 tablespoon mayonnaise and 1 tablespoon tomato ketchup

Directions:

  • Heat butter and oil in a pan on a medium flame and add chopped garlic. Saute them for about 5 minutes and let the garlic turn a little brown. Be careful to not burn the garlic.
  • Add prawns and keep tossing them, add mixed herbs and saute them for about 6 minutes, till the prawns are cooked. Do not overcook the prawns. Since this recipe uses butter, you won’t need to add salt, but in case you feel its less, just add a pinch of salt.
  • Serve the prawns in tartlets and garnish with mint leaves.
  • For the onions, combine flour, corn flour, herbs, and salt and make a batter using beer.
  • Coat the onion rings in batter and then coat them with breadcrumbs.
  • Let them rest for about half an hour in the freezer before you fry them.
  • Fry the frozen onion rings in oil at medium heat till they turn golden in color.
  • For the dip, combine mayonnaise and ketchup and enjoy with your onion rings and prawns.

2. Patata Bravas

A simple and easy to make the dish – Patata bravas is a common tapa native to Spain. Seasoned with salt – it is best served with smoky salsa brava sauce.

Ingredients:

  • 1 tsp. hot smoked Spanish paprika 
  • 1⁄4 tsp. sugar 
  • 5 canned whole peeled tomatoes, drained 
  • 3 cloves garlic, peeled 
  • 1⁄2 small yellow onion, thinly sliced 
  • Kosher salt and freshly ground white pepper, to taste
  • 1 tbsp. olive oil 
  • Olive oil, for frying 
  • 1 Kg. small waxy potatoes, quartered 
  • 1 cup mayonnaise 
  • Minced parsley, for garnish (optional)

Directions:

  • Pulse paprika, sugar, tomatoes, garlic, onion, salt, and white pepper in a small food processor until coarsely ground. Heat olive oil in a 2 -qt. saucepan over medium-high heat. Fry tomato mixture, stirring occasionally until slightly reduced, about 5 minutes; set bravas sauce aside
  • Heat 2″ olive oil in a 6-qt. saucepan until a deep-fry thermometer reads 220°. Add potatoes all at once to oil; cook until tender and pale golden, 35–40 minutes. Using a slotted spoon, transfer potatoes to paper towels to drain; chill 30 minutes. Remove oil from heat.  
  • Return pan of oil to heat until a deep-fry thermometer reads 350°. Working in batches, fry potatoes until golden brown and crisp, 4 –5 minutes. Using a slotted spoon, transfer potatoes to paper towels to drain; season with salt. Drizzle potatoes with the reserved bravas sauce and mayonnaise; garnish with parsley if you like.

3. Ham Croquettes 

Traditionally known as croquettes, they are small fried breadcrumbed rolls, usually containing ham, cheese, mashed potatoes, ground meat or veggies as the main ingredient. One of the most available tapas in Spain, it is best enjoyed with thick bechamel sauce.

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons flour
  • 1/4 liter of milk
  • 1 egg
  • 100 grams of breadcrumbs
  • Nutmeg
  • 150 grams of cooked ham or Serrano cut in tiny pieces
  • Salt

Directions:

  • Pour the oil in a pan and place it on the fire. When hot, remove from the heat and with a wooden spoon add the flour, stirring until it becomes a paste.
  • Place the pan on the stove and add the milk slowly, stirring the mixture until it is done and has a good consistency.
  • Add nutmeg, ham, and salt until the mixture thickens.
  • When the mixture has thickened, place it on a tray or bowl and let it cool down.
  • Beat 2 eggs in a bowl. 
  • When the croquette mixture is cold, cut into pieces and give a long oval shape.
  • Dip the croquettes in beaten egg, making sure they are covered completely. 
  • Now cover the croquettes in breadcrumbs. 
  • Fry the croquettes in olive oil (the oil should cover the whole croquettes). When they are golden, remove them from the fire and serve them.

4. Stuffed Bell Pepper bites with Beer Barbeque Braised Chicken Keema

Ingredients:

  • 2 bell peppers insides scraped and cut into wedge shaped pieces
  • Chicken mince 250g
  • Barbeque sauce 1cup
  • Mahou maestra wheat beer 100ml
  • Jaggery 1/2 teaspoon
  • 1 Onion chopped fine
  • 5-6 garlic pods grated
  • Red Chilli powder/paprika 1/2 teaspoon
  • Salt and pepper according to taste
  • Olive oil 1 tablespoon
  • Grated cheddar cheese 1 cup

Directions:

  • Preheat airfryer to 200 degrees. In a bowl combine the beer, barbeque sauce,jaggery
  • In a wok take olive oil and sauté the onions and garlic
  • Add the chicken mince and cook for 5-10 min.
  • Add the liquid mixture to this and cook till thick and beer cooks out.
  • Add salt and pepper. 
  • Brush the bell peppers with olive oil, place grated cheese at bottom. 
  • Top with cooked braised chicken mince and jalapenos. 
  • Airfry for 10 min or so till peppers are just soft. 
  • Sprinkle some parmesan and chilli flakes on top before serving!

5. Tapas Salmon with Egg and Mayonnaise 

This type of tapas on long bread is another commonly found Tapas. Loaded with smoked salmon, a slice of hardboiled egg, a small dot of mayonnaise, and held together by the traditional toothpick.

Ingredients:

(10 portions)

  • 5-6 ounces of Smoked Salmon, thinly sliced
  • 10 slices of Hardboiled Egg
  • 2 Hardboiled Eggs, grated
  • A bit of Black Pepper
  • Little amount of Mayonnaise
  • 10 slices of Long Bread, as fresh and crispy as possible
  • Toothpicks
  • Lemon juice

Directions: 

  • Put all ingredients and plates etc. in the fridge for an hour or so to cool down before you start
  • Load a slice of bread with the salmon and slice of egg
  • Use a teaspoon to put a dot of grated egg white over the slice of hardboiled egg
  • If you like, a few droplets of lemon juice or lime juice over the salmon
  • If you like, a dash of ground black pepper over the egg
  • Next comes a nice little dot of mayonnaise for garnishing
  • Stick a toothpick through all ingredients to keep things together.

6. Crispy Beer-Battered Fish

Seasoning it with wheat beer adds subtle nuances of the hops and makes the batter even lighter. It is best made with Mahou Maestra heat, the recently launched wheat beer that adds the tangy taste to the fish. Fried until golden brown and crispy, beer battered fish is a classic dish you can’t go wrong with.

Ingredients: 

  • 1/2 cup cornstarch
  • 1/3 cup of Mahou Maestra Wheat beer
  • 1-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon Creole seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 cup all-purpose flour, divided
  • 1/2 cup 2% milk
  • 2 cups crushed unsalted top saltines (about 40)
  • 4 cod fillets (6 ounces each)
  • Oil for deep-fat frying

Directions:

  • In a shallow bowl, combine the cornstarch, baking powder, salt, Creole seasoning, paprika, cayenne, and 1/2 cup flour. 
  • Stir in milk and Mahou Maestra Wheat beer until smooth. 
  • Place crackers and remaining flour in separate shallow bowls. 
  • Coat fillets with flour, then dip in batter and coat with crackers.
  • In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fish in batches for 2-3 minutes on each side or until golden brown.
  • Drain on paper towels.

Mahe, Modern Coastal Cuisine Restaurant Launched ‘Funked Up’ Bar Nights To Jazz Up Goa

Mahe, has been fast gaining people’s attention in Goa for being one of the best places serving modern coastal cuisine. Although I am yet to have a full-fledged meal at Mahe and review the food, I have attended a couple of events at the place and the entire experience has been great every single time. I actually love the vibes and ambiance of this restaurant.

This Wednesday, Mahe launched, ‘Funked Up’ Bar Nights, which is all set to become the hottest mid-week party in Goa. The launch event saw the presence of the most prominent and popular socialites of Goa, including names like Saiwyn QuadrasShweta BajajShefali GandhiAziz LalaniShagun MehraGiler Knapton, Actor Tapan Acharaya, Designer Monty Sally, Anuradha Holst, and Shilpa Mehta amongst others.

The event was sponsored by Simba and showcased a variety of their beers including the Simba Wit. The crowd danced to some foot tapping Hip Hop & Funk music by DJ Benny!

Delicious craft cocktails, especially the signature regional favorites like Negroni de Goa where chiretta leaves are infused into Campari and served along with cashew feni and house-made vermouth, Mahua Spritz, Kokum Shrub, and the Mallu Mai Tai were available for the guests to indulge in.

The Kerala Beef Fry, Chorizo with a poached egg, Stuffed Morels in potato jus, Crispy Okra with pickles were some of the food items that guests were seen savoring. I personally enjoyed a bit of beef fry with neer dosa and I have to admit that it has left me asking for more. I now actually look forward to visiting the place soon for a complete meal.

Overall, it was a fun evening and now you know how to make the most of your weekdays and head straight to Mahe for amazing ‘Funked Up’ Wednesdays.

Wanna Have The Best Pizza In Goa, Davide’s Pizzeria Is Your Go To​ Place!

When it comes to having a Pizza at a restaurant, I am very particular, because I don’t end up enjoying them at most of the places. I don’t fancy the well known and popular pizza chains either, because for me sometimes the base is too thick, or the toppings are not up to the mark, and the biggest challenge is to find that perfect cheesy pizza. What’s a pizza without that quintessential cheese pull. But thank god for Davide’s Pizzeria, I won’t be able to complain anymore. Its hands down the best pizza place in town.

Nestled in a quaint and beautiful garden and an indoor bar, even in the hustle bustle of a tourist swarming place like Candolim, this place has its sense of calmness. As per Davide, it was one of the prerequisites. The place is very tastefully decorated with a minimalistic approach and has a perfectly inviting ambiance. Its a place where you can sit back, relax, enjoy a good meal and spend some quality time with family or friends. Play a game of Ludo, UNO, Chess or Scrabble which occupy a tiny space on each table and have been kept to add a fun quotient and also I feel its a great idea to put your mobiles away for some time and just focus on some intimate time, talking, playing and of course enjoying food with your loved ones. Also feel free to take your four-legged companions with you, since its a pet-friendly restaurant and both Davide and his partner Alciela are pet lovers.

Coming to food, trust me its as authentic as it can be. Given the fact that about 80-85% of the ingredients are imported from Italy, the quality of ingredients used is very high. They also depend on homegrown organic veggies and local produce and all the pizzas and bread are baked in house.

To begin with, I wanted to try the classic garlic bread (Crostino’ All Aglio) since that’s a favorite for both me and my son. On Davide’s recommendation, we also had the Focaccina Bianca, which was a crispy bread topped with some sauce, rosemary, garlic, and rock salt. I wish words could justify the taste and flavors we experienced while indulging in the buttery garlic bread and the crispy focaccina. Both of them were simply amazing. Gorging on these delicious bread, sipping a chilled coke over a game of Ludo with my sonny boy made for a perfect lunch time indulgence.

We were already full with these starters, but obviously, we came for a Pizza, and we had to have one. So we gave ourselves a break of a few minutes and were caught up in a beautiful chit chat with the warm couple hosts Davide and Alciela. Right from their caricatured logo, to the tasteful decor, to the style of cooking and personal attention, everything at this place reflects their personality. Both of them are so loving, passionate and friendly, that you cannot ignore the personalized charm that they bring to the place. Davide’s Pizzeria is definitely about the excellent food they serve, but it is also about the people behind it.

Oh yes, and now about the Pizza, all I can say is that I haven’t eaten a better Pizza than this in a long long time and I think I am already spoilt for my choice. I don’t think I will be easily able to like Pizza at any other place now. The dough’s freshness could be smelled, the crispiness was perfect and the main thing, cheese. Oh My God, the cheese pull was so so good that you have to try it to believe it. I had the Al Pollo Pizza which had tomato, mozzarella, chicken, garlic, chili flakes, and parsley.

I honestly had no place in my stomach and was all ready to leave, when Alciela mentioned the desserts and I could not refuse and I am so glad I didn’t because then I would have missed the best possible Tiramisu ever. A tiramisu so perfect has been almost impossible to find, a tiramisu without that overload of cream, a tiramisu which was super moist, cakey and had the perfect dash of coffee. But this Tiramisu, a recipe shared by Davide’s mother is as close to as Tiramisu is supposed to be. The banana cake was another exemplary dessert that should be given a try, but Tiramisu, dont miss it at any cost.

Well, to conclude, Davide’s Pizzeria is one my list of most recommended restaurants to visit in Goa and I highly recommend it.

For example, within the Asian section, you get to savor tastes of Chinese, Thai and Malaysian, etc. and Indian section showcases food from different regions like Kashmiri, Punjabi, Hyderabadi, Rajasthani and many more. The selection of cheese and dips is something you can’t get over. From Buffalo Mozerella to Brie, Cheddar, Gouda, Emmental, Edam, you will be simply spoilt for choices. The homemade dips like guacamole, hummus, tzatziki were delicious. I had a plate full of cheese, these dips and some crackers as my main meal 🙂

But I have to accept that Indian, Continental and Asian sections were as interesting and some of the dishes that I highly recommend are:

  • Paneer Hariyali Tikka
  • Tandoori Aaloo

And for dessert lovers, this brunch will prove to be a heaven. There is so much to choose from. From season specials with mango to cakes, puddings and Indian sweets, the variety is huge and almost everything that I tried was fabulous. And the cocktails are mocktails were not just delicious but also very very pretty looking.

After lunch, I headed to the pool for some chilled out time and after a very relaxing swim, I reluctantly got ready to come back home. I was feeling so so good there that I actually didn’t want to come back.

I had a lot of fun at this wholesome Sunday Brunch with my sonny boy and I am sure you too will love it. The brunch starts at INR 1550 onwards and trust me its worth every penny that you spend.

Do I recommend this place, Yes I certainly do!! Its full fun, value for money and perfect to spend a Sunday with loved ones.

Wok & Roll, Goa, Dishing Out Special Mango Menu!

Goa has a variety of more than 82 mangoes and the Goan mangoes are believed to be the best, there is simply no match!

In season time, it becomes obvious for people at large including restaurants to extensively use this king of fruits in the food they eat. Of course, eating the ripened sweet mango as it is, is the ultimate, but the use of mango as one of the key ingredients in cooking is also seen a lot in summers. From drinks to desserts, the mango mania literally takes over and making the most of the season, Wok & Roll, has an ongoing Mango Food Festival.

The moment I entered the place, I was in awe of it, expansive space, lush greens, overlooking the Nerul creek, the place looked ideal for chilling around for a lazy lunch. Somehow I evaluate the ambiance of the place basis how it looks during the day time and I have a soft corner for places that offer a great view and are spacious and green. Wok & Roll is all of it and more. The decor is simple and minimalistic, since its an Asian restaurant, you do get to see some typical elements in the decor, but nothing overpowers the spaciousness or the greenery of the place. Although Asheen Lobo, one of the partners has been one of the first few people I befriended in Goa when I came 2 years ago, I still never got a chance to visit any of his restaurants and how glad I am, that I finally did.



To begin with, I had the Mango and Star Anise Mojito, which was very refreshing and flavourful, and soon followed the Amuse Bouche and I have to say that it was the best Amuse Bouche ever. It was like a Thai Paan and one could make their own paan picking up ingredients like peanuts, fried onions, raw onions, green chilies, grated coconut, and a Thai sauce. It really turned out to be super delicious and I would not mind munching on it anytime.

This was followed by Vietnamese Prawn & Chicken Lemongrass Skewers served with a Mango Sauce. The skewers were perfectly done without overcooking the meats and the combined taste of prawns and chicken made it little different than the usual skewers. The tenderness of chicken was perfectly complimented with the slight raw taste of prawns. And that mango sauce is definitely a steal.

Thai Mango Som Yum was another lovely starter that I had. The typical raw papaya being replaced by sweet and raw mangoes made for a great choice. It was spicy, tangy and things nice.

For the mains we had, Burmese Prawn Mango Yellow Curry, Mango Fried Rice, and Mango Sticky Rice. Everything was up to the mark and super delicious. I in particular loved the mango fried rice the most.

For the desserts, we had glass noodles and mango and that too tasted amazing. A frozen watermelon mocktail is what I had along with it, and trust me the drink was both tempting and refreshing. The presentation of this particular drink was the best.

Apart from serving great food and drinks, Wok & Roll is environmentally conscious too. They use organic vegetables and most of the vegetables, spices, and fruits that they use come from their own expansive kitchen garden. They also utilize their food waste in converting it to biogas and this gas is exclusively used for boiling the herb teas.

Rejuvenating Experience at Tattva Spa, Cidade de Goa

The word spa itself brings a sense of relief to me because in day to day running around, we often forget that our body, mind, and soul all need their share of relaxation. The daily grind usually takes a toll on me and I rarely get a chance to sit back and relax. But sometimes you literally have to push yourself and head for rejuvenation.

After that, we moved to the spa room, which smelled luxury from every corner. The ambiance was perfect, inviting, calm and relaxing. A good 40 minutes massage with medium pressure, Abhyanga helps to de-stress, relieves of pains, tones up the muscles, alleviate sleep and helps in blood circulation.

After the massage, a gentle floral mist scrub was applied to the body to gently exfoliate the skin, leaving it soft, supple and glowing. A misty fusion of aromatic oils, palash, saffron and specialty floral extracts from the Himalayan valley, this scrub indeed felt very very refreshing.

I actually felt completely recharged and full of life after my session. My body felt lighter and the skin definitely felt softer and smoother.
